Hikiniku to Come: Tokyo's Popular Restaurant Arrives in Northern Taiwan
Shohei Yamamoto, the founder of "Hikiniku to Come," also known as the "Hamburger Steak Maniac," has extremely high standards for ingredient quality, insisting on using domestic Japanese beef, blending it in a unique ratio, and hand-making it fresh daily. Adhering to the culinary spirit of "freshly ground, freshly grilled, and freshly cooked," it is served with freshly cooked Hagama white rice. In Japan, it is known as the "ceiling of the hamburger steak world."

The first store opened in Kichijoji, Tokyo in 2020, followed by stores in Shibuya, Kyoto, and other locations, becoming a popular local restaurant. In 2023, the brand ventured overseas, with Taipei being the first overseas branch of Hikiniku to Come. The first store was originally located on Chifeng Street, Datong District, Taipei City (Zhongshan Store), but later moved to near Huashan Creative Park (reopened in 2024 as the Taipei Huashan Store) and changed to an online reservation system to alleviate crowds. In 2025, a second branch opened in the Xinyi District.




The environment is designed in a Japanese minimalist style, with an open kitchen. Guests can sit at the counter seats around the grill and witness the hamburger steak making process, from grinding the meat and forming it to charcoal grilling, every step is filled with craftsmanship. Thoughtfully, there are also odor-proof lockers to prevent the smell of grilled meat from lingering on clothes.



The white rice in the store is cooked in a Hagama pot, with each grain distinct and fragrant, and refills are unlimited. With the concept of a "one-hour feast of meat and rice," dining time is limited to 1 hour, and each person must order a set meal. The set includes three 90g charcoal-grilled Wagyu hamburger steaks, one raw egg, miso soup, and all-you-can-eat white rice (Koshihikari rice).





In addition, there are eight special sauces and two side dishes, such as broad bean sauce, pickled napa cabbage with plum vinegar, green chili pickled lemon, garlic oil, and Sichuan pepper sauce, allowing customers to create a variety of flavor combinations. It is recommended to taste the original flavor first to feel the meat juice and charcoal aroma. The second piece can be paired with the store's recommended grated radish and yuzu vinegar for a refreshing and non-greasy taste. The third piece can be made into a hamburger steak rice bowl by placing the raw egg on the rice, enjoying the rich yolk and meat juice blending together for a smoother taste.
